South Portland chef to take part in unique event

O’Maine Studio & Media Kitchen will host Filipino Chef Yana Gilbuena Monday, Aug. 31 and her SALO Pop-Up Dinner Project. The 2015 SALO Project is an underground pop-up dinner series traveling cross-Canada with a tour stop in Portland. Last year Gilbuena made a name for herself with her “50 States in 50 Weeks” tour of the U.S.

Gilbuena will work in collaboration with Chef Dave Mallari of Portland’s The Sinful Kitchen. Gilbuena and Mallari, a South Portland resident, will serve Filipino food that is focused on the flavors of its three regions: Luzon, Visayas and Mindanaowith. The fruits of Maine’s farms and sea will be featured throughout the meal. Gilbuena presents the meal kamayan style, which means to eat with one’s hands. The meal is served on banana leaves in the center of the table.

Cost for the SALO Project pop-up dinner includes the meal and a selection of specialty drinks, wines and Rising Tide beers. Guests will also enjoy Filipino folk dance demonstrations.
